Quick Feijoada

Brazilian Black Bean Stew




1 Cup small dried black beans
1 Large onion chopped
2 Cloves of garlic
2 Tablespoons of olive oil
2-3 Bay leafs
1 Teaspoon of red pepper
1 Can crushed tomatoes

1-2 Ham slices, diced
2 Sticks Linguica sausage sliced




Pour boiling water over the black beans and let soak until ready to add to stew.

Heat oil in a large pot and brown ham cubes and linguica slices.  
Remove from pan, set aside.
Add onions and garlic to the pot and brown, stirring occasionally, and scraping up the 
browned bits from the bottom.

Put the meat back into the pot add the tomatoes, spices, and beans (rinse the beans until the water runs clear before dumping them in).
Add enough water or chicken stock to cover all. 

Bring to a simmer and cook until the beans are soft.
