One more soup before the weather gets too warm.
Break out a giant pot for this one!
You'll make enough for next winter.
Put 1 whole chicken plus 6 breasts
or 2 whole chickens (you choose) into your giant pot
with enough water for your chickens to swim.
Also add:
1 whole onion chopped
2-3 celery stocks also chopped
5-6 carrots chopped
I see a theme here!
In a spice ball put:
2 sticks cinnamon
whole allspice
2-3 bay leafs
Salt and pepper to taste
Simmer
When the chicken is done remove and clean.
Shred meat into bite size pieces.
You can do this while the rice and potatoes are cooking.
To your giant pot of stock add:
1 1/4 cups rice plus
1 - 2 diced potatoes
(We like our starch!)
When the rice and potatoes are done add
the chicken pieces with one can of tomato sauce to your soup.
Serve
Garnish with some parsley
I usually make a much smaller batch!
